Post-Harvest Quality and Sensory Evaluation of Mini Sweet Peppers

Sweet pepper (Capsicum annuum L.) is one of the most consumed vegetables in world, being recognized as a food with high nutritional value. Recently, market for sweet and colorful mini peppers has increased, especially among demanding consumers novelties functional foods. In this sense, we evaluated genotypes (Akamu, Kaiki, Kalani, Kaolin e Moke from Isla® seeds) regarding physical-chemical, sensory analysis aspects. A wide variability was observed genotypes, highlighting Kalani genotype total carotenoids, Akamu, Kaiki phenolic totals content antioxidant activity. showed higher vitamin C fruit firmness. Based on analysis, Akamu obtained greater global acceptance. The can be considered an important marketing strategy trade, associating different shapes, colors quality.
